"This wine is made from 100% Pinot Noir, grown organically at the Bassi Vineyard in Avila Beach — 1.2 miles from the coast.
The grapes were picked on September 9th at 22° brix with a 3.2 pH. Fermented in an open top wood foudre (basically a gigantic barrel) with native yeast and no additions. 17 days later, it was pressed in a basket press, settled overnight in a stainless tank, and then racked back into the foudre. It went through natural malolactic fermentation and bottled unfined and unfiltered. Minimum S02 was added after fermentation completed."
