"80% of the Pinot Grigio has a light maceration in cement tanks, 20% is used as the “Solera” which is poured with previous vintages in old barrique (4-5 transitions), cement for six months, then is put in used barrels for another 6-months. 2 months in bottle before release.
This wine is bone dry yet rich in the mouth. Elderberry, anise & white flowers, white pepper and persistent minerality. Balanced acid & tannin. Alessandro recommends opening 30 minutes before drinking"
