"We believe in old world style with fresh appeal starting with exceptionally farmed organic grapes. In the cellar we add nothing to the wine - no added sulphur, commercial yeasts, nada. This style of winemaking is often called Zero Zero today.
We were able to score some old vine Chenin last year from a family farm in Redwood Valley. The fruit is soaked on the skins for 2 days, fermented, and raised in neutral barrels for 6 months. This is Chenin Blanc just the way we like it: fresh, clean, with a textural backbone and nervy acidity. A fun little ripper that can definitely play the part of serious white wine when needed!"- Subject to Change Wine Co.
