Esablished in 1979,Paxton is a family-owned wine company and sources exclusively from estate vineyards adhering to organic and biodynamic farming.
A renowned viticulturist in Australia with over 30 years of experience, David Paxton grafted their Graciano onto old Chardonnay vines, showcasing the range of McLaren Vale's potential for a varietal otherwise grown primarily in the Rioja region of Spain.
After 'selective harvesting', winemaker Richard Freebairn oversaw a slow and cool whole-cluster fermentation in open top vessels. Following 13 days of pumpovers and plunging to enhance the tannin profile, grapes were pressed to oak barriques for 9 months of aging prior to blending and bottling.
