"All hail the glory of the Carbonic Zinfandel! Produced exclusively from fruit grown on the limestone and schist soils of the Rorick Heritage Vineyard at 2000’ elevation, it is a vibrant and eminently drinkable example of the combination of fruitiness and savory flavor expression that highlight wines from our estate.
The ZINCENZO! was hand-picked and underwent full, true carbonic maceration: whole Zinfandel clusters were sealed in a fermentor from which all oxygen had been expelled by replacement with CO2. More CO2 was added daily, and any juice collecting in the bottom of the tank was drawn away in order to prevent alcoholic fermentation from beginning. At the end of two weeks, the clusters were removed from the fermentor and pressed down to one stainless vessel, where it rested for 8 months before being bottled unfined and unfiltered. It is a wine which offers a scintillating, alternative vision of the variety -- it is at once clearly Zinfandel, and at the same time is completely unique unto itself -- and it just might help you with your inversion practice.
