"Johan Vineyard is a certified biodynamic vineyard sitting at the furthest eastern reaches of the Van Duzer Corridor. Planted at lower elevation in the path of cool Pacific wind, grapes ripen slowly, gaining flavor and retaining acidity. Farmer Dan Rinke manages the vineyard, coaxing individualistic expressions from each block of the property."
"Grapes were handpicked the morning of September 29, whole cluster pressed, and the juice was hyperoxidized. After settling, the juice was racked off of gross lees to 100% NOVUM amphorae where fermentation began spontaneously. Each amphora was co-fermented with a blend of Pinot noir (66%) and Chardonnay (34%). As primary fermentation was finishing, the wine was racked off of fine lees and chilled to halt fermentation. Just prior to bottling, the wine was mixed to homogenize extra fine lees and warmed to encourage the completion of primary in bottle."
